HOR D'OEUVRES FOR ANY EVENT!!

A common question we get asked for the first time party hosts is the number of Hor D'Oeuvres needed for guests. A couple factors determine the number needed at any event. First, the type of event is important.

Are you having a cocktail reception only? For instance, if you are having a reception from 8:00 PM to 10:00 PM that includes alcoholic beverages, we suggest 7-10 Hor D'Oeuvres per guest. People tend to munch and mingle at these type of events. Another reason is the time and duration of th event. Most people will have eaten dinner by the time they arrive at an event that begins at 8:00 PM. Also, if you want to encourage your guests to drink alcohol and socialize with others, light Hor D'Oeurves might be the way to go! However, light and heavy Hor D'Oeuvres can be combined at this type of event.

So what is the difference between light Hor D'Oeuvres and heavy Hor D'Oeuvres? Glad you asked! Light Hor D'Oeuvres are sometimes easier to eat and tend to be less filling. Things like: crisp endive spears, bruschette, spring rolls, and mini fish tacos. Heavy Hor D'Oeuvre are more subsstantial items that will tend to fill up your guests. This includes beef sliders, crab cakes, chicken skewer satay, filet mignon crostini, and deep fried mac and cheese balls.

Heavy Hor D'Oeuvres can be served if the event is a birthday party, shower, or wedding reception. At this type of event guests assume food will be served. When considering the number of Hor D'Oeuvres to serve guests, take into consideration the itinerary of the event as well as the additional menu items that you might have included for your event. Concerning the itinerary, how long are the guests going to have to eat? For most cocktail hours that also include a buffet or dinner menu, we suggest around 45 minutes to an hour depending on the amount of people attending the event. For smaller parties you should think about the games or activities that will be taking place throughout the event. If the event is full of activities and cake, 3-5 Hor D'Oeuvres could be chosen to satisfy your guests.

The time of these events should be taken into consideration as well. If a wedding begins at 6:00 PM and last all night, we suggest 5-7 Hor D'Oeuvres in addition to a full meal or buffet. When guests attend event, they are more likely to eat the first 30 minutes that food is available.

Taste the Holidays

It is about that time! The holidays are coming up sooner than you think. time to start thinking about holiday parties and breaking bread with the people closest to you! Culinary Art Catering has been busy customizing holiday menus that will go perfectly with any event you may have.

This year, our annual holiday tasting will take place Wednesday, October 5 from 11:30 AM to 1:00 PM. This is the tasting you will not want to miss! We have lots of surprises in store and most importantly, great food and passionate event planners to assist you in all of your event design needs! For our holiday tasting, Chef Yossi works hard to create a tasting menu full of faboluous holiday meals for you to sample.

So, wear your holiday colors and come to the tasting! Culinary Art Catering will be giving back to the community by partnering with Toys for Tots! If you would like to donate toys to children who might not have the opportunity to enjoy Christmas otherwise, you can drop donations off at our office until December 9th!

Tips on Tipping

Knowing the proper protocol for tipping your caterer is a question we hear often. There is no one rule of tipping and quite honestly every catering company handles this a little differently. Some companies will assess a percentage fee (20% or more) of your total bill (or on the food and beverage) as the gratuity or service charge. In some cases they will also charge an hourly fee for service staff and bar staff. Sound complicated? It can be.

Our policy is simple, our catering staff is charged by the hour with a minimum number of hours required. If you choose to add a gratuity for the staff (ideally based on the level of service you recieve) , you may add the tip to the final invoice or give the tip to the staff in cash. Typically the cash would be given to either to event coordinator or the lead server to distribute. The average amount of the tip varies as much as the menu prices.

Remember to include tips for bartenders (we do not allow tip jars to be used at private events), delivery staff, kitchen staff and don't forget your coordinator who typically goes above and beyond with assisting during the event.

I toyed with naming this post "Super Caterer" but thought it might be a bit much. Although it does seem that to be a caterer you have to possess some superhuman powers. It is our job to always have a plan B ready to enact no matter what happens. The other title option was "Never Let Them See You Sweat" because that is also an integral part of the process. Imagine its your wedding day and you see your caterer is frazzled or uncertain what to do ! As professional caterers we could never, ever let that happen however, for some inexperienced catering companies or "mom and pop" companies it does happen. Yes, those companies can usually give you a much cheaper price but as a consumer you have to realize that you are running a great risk. These are also the companies that can call you last minute and say they can't show up or not call and not show up. These are also the companies that typically do not have insurance or a license. If you are catering an event for 200 people, you want to be 100% sure that your catering company is insured, otherwise the ramifications could be a catastrophe!

Surely I have scared you. However, that is really not our intent. It is just important that you, the consumer, are informed of what can happen if you do not wisely choose a catering company.
A few months ago I received a frantic call from an event planner the DAY OF a wedding for 200 people - the caterer had called and cancelled last minute because of a family emergency. I could never understand how someone who calls themselves a catering company could ever let this happen. We would never in a million years cancel on a bride the day of her wedding! Granted they had an emergency but we go back to that "plan B" thing I mentioned earlier.

A little less dramatic of an example was the event where the client wanted to provide all of their linens but did not order napkins! We show up to the venue ready to set up for a plated dinner and there are no napkins to be found. After checking with the client , she realized that she did not even think about renting napkins. No worry - SUPER CATERER TO THE RESCUE! A few phone calls and we were able to have a rental company open up on a holiday weekend and provide us with the napkins in plenty of time for the event. The guests had no idea that they came "this close" to using their sleeves.

Another example was the bride who was providing her own alcohol and rented a margarita machine for the reception from a third party vendor. We show up at the venue, set up and an hour before the event there is still no margarita machine! We made several calls to the company which she was renting from and received no answer/ no reply. No worry - SUPER CATERER TO THE RESCUE! (sorry, I just like standing up at my desk with my hands on my hips saying that) We sent one of the servers to a nearby Target store to purchase a couple of blenders and whipped up the margaritas in the back of the house. Serving them during the cocktail hour - just as the bride had requested. Of course, the bride was none the wiser until after the event was over when we told her what happened. She was, fortunately, able to get a full refund from the rental company.

Its this little things (and sometimes the big ones) that set a professional caterer above the rest ! Think about it when you are shopping for a catering company.

Housewarming Parties!

Dan and Hetal wanted to host a Housewarming Party in their FABULOUS new home! Hetal contacted us about catering her event and said that she wanted to do it big, and make sure that everyone had a great time. Her wish was granted this past Saturday night. Everyone at the party had such a fun time and no one fell into the beautiful pool!

Fruit & Cheese Display, accented with Fresh Crudite.

Flat Bread Crostini Station, with ingredients consisting of black and green olives, sun-dried tomatoes, roasted red bell peppers, 3 types of cheeses and ham.

"Taste of Italy" Pasta Station...this was a huge hit for the guests! They loved the variety and the SPICY Red Chili Flakes!

Once the sun set on this outdoor bar, it was the main hang out. The perfect weather made this party so relaxing. Anna, the bartender, made a wonderful "Drink of the Night"!!

As the adults played down stairs the kids were busy upstairs with a babysitter and a "Kids Buffet" all to themselves. The kiddos dined on Chicken Tenders, Fresh French Fries, and Grilled Cheese sandwiches.

When Culinary Art Catering was asked to cater the wedding of Aubrey and Andrew, we had no idea what a fun couple these two were. We soon found out that they were young, in love, and 100% sure that they were perfect for each other. Both heavily involved with their church, on staff and volunteering, they met and fell in love! We have truly been amazed at their friends and family, and the strong bond with each and every one of them. Here are a few pictures of the wedding at Event1013 in Downtown Plano on E. 15th Street.

Museum of Nature & Science Topping Out Event

Culinary Art Catering was honored to be a part of the Topping Out event for the Museum of Nature & Science. The event was dedicated to the placement of the final beam at the new location of the Museum of Nature & Science!

To name a few of the participants at the event!

The decor has a construction theme. There we construction cones and barricades at the event, and all of the cocktail tables covered in neon pink, bright orange and lime green gave a pop to the unfinished 17th floor at 17Seventeen in Uptown! We made a make shift prep area on a vacant side of the 17th floor, it worked out perfectly!

I loved hearing the inspirational words from Ross Perot, Sr., "This is an exciting day for the children of North Texas, it means we are much closer to opening one of the finest museums in the country."

A "show beam" for the museum was set at the front of the room for all of the guests to sign and be a part of history!

Culinary Art Catering created a fantastic menu with Lobster Corndogs, Mini Fish Tacos, Endive Spears with Fig, Pecan and Goat Cheese, Filet Mignon Crostini, and Shrimp & Papaya salad served in a mini tomato cone. Yummmm!

Our delicious desserts: Mini chocolate cake balls, Dark chocolate dipped-raspberry swirl cheesecake bites, and Mini Creme Brulee bites.

Welcome out of town guests with FOOD!

Welcoming a wedding guest who has traveled from out of town may seem like a hard task to accomplish, but with my tips you will have them at "Hello"! We have all seen the gift bags with the traditional crackers, bottled water and a map in them, but times have changed!

One thing that you want to do first and foremost is to reserve a block of rooms for your out of town guests. They may not know where the nice, safe, and close-to-you hotels may be, so help them out. You can normally get a discount on rooms as well. What a great start to the festivities!

Now for the fun part...the food! Wow your guests with food that is from the Dallas/Fort Worth area. What about a gift basket or bag with pecan pralines, jalapeno jelly, or spiced pecans? Among many other delicious treats from the area, these items are sure to please. Head over to Texas Food for some great ideas! What about a copy of DMagazine or DWeddings, they are so many fun things to do in this Metroplex...so show it off!

Most recently I have had multiple inquiries for "Texas Comfort" food. This is across the board for events that we cater. I see it most in weddings though. Personally, I love it! I think that people wanting to have their menu be based around this great Lone Star State is awesome!

Are you in the works of planning an outdoor wedding for 2011! If so, here are some tips to help make your outdoor wedding dreams come true!

1) If you are using candles at the reception, cover the candle with a hurricane to keep the flame from blowing out. Or, you can use flameless candles.
2) To keep your cake from melting in the Texas heat trade in buttercream frosting for a heavy duty fondant frosting!
3) Offer lemonade or punch before the ceremony to your guests to keep them cool.
4) A DIY program in the shape of a fan is a sure way to keep your guests cool as well.
5) Play it safe with food, have passed hor d' oeuvres served out side and keep your buffet inside.
6) Opt for a tent to keep you safe from May showers!

Weddings Food Trends 2011

Howdy all! I'm the newest face at Culinary Art Catering! I've enjoyed learning all about the group here at CAC! We have so much fun at work, which makes our day speed by!

I will be handling the Social Events and Weddings, which is perfect for me! I love weddings!! I attended El Centro for Culinary Arts and Hospitality Management, and from there I put my education to work in the Hotel Industry. I worked for Hotel Zaza for over 2 years and Rosewood Hotels & Resorts (The Mansion on Turtle Creek and Rosewood Crescent Hotel) for over 4 years. I have always had a passion for the "Catering World" and I'm so thrilled to be here. I feel as if being here is a perfect fit for me. The Texas Museum of Automotive History in Fair Park will open its doors on November 20th for a lavish Grand Opening!

The Museum will highlight and feature a Restoration Factory designed to teach at risk young men and women (ages fifteen to eighteen) life and work skills in addition to showcasing the inter-development between race cars and commercial cars covering the period of 1901 to 1984, the founding year of Vintage auto racing here in America. The Museum will be highly interactive and feature numerous movie and video screens depicting the now classic cars as they were raced and how they were viewed and admired during their prime. The museum will be available for private event rental for groups as small as 50 and as large as 3,300.

Happy Saturday! For most people that means it is a day of rest and play, a free day to do as you please, however, for those of us who have committed our lives to the hospitality industry it means only one thing "WORK". When the clients fun begins so does our job. So this Saturday was "slow" for us (by slow I mean we only had three catered events today) so it seemed like a great opportunity to schedule a couple of tastings for a couple of brides I have been speaking with. Well, 1 or 2 tastings turned into 4 or 5 tasting appointments. The fun part was that they were all wedding clients. Some with mega budgets some with micro budgets and a few in between. Each one with a different concept of what their day will be. Really a fun day to hear how people met and hearing what they had in mind. I truly love what I do and the joy of taking the journey down the aisle with every bride (and their mother).

Earlier today I headed over to the Coppell Senior/Community Center in Coppell for a site visit and tour. All I can say is WOW! What a gorgeous venue! Tucked away off of Bethel Road, amid the lush trees and peaceful, tranquil views of the Grapevine Spings Park its the perfect location for an event of any kind. The architecture of the facility has a rustic , Hill country feel but sleek in its composition. Exposed wooden beams accent the multi purpose room with floor to ceiling windows over looking the park. We also LOVED the fully equipped service kitchen with warmers, ice maker and refrigeration.

If you are looking for a venue to host your next event you should definitely take a look at this location!

Congratulations to the happy couple! The bride dazzled in white at a gorgeous outdoor ceremony. The guests decked out in their Sunday best sipped cocktails and sampled yummy hors d' oeuvres post ceremony. Including summertime favorites such as chilled watermelon gazpacho soup sips, cucumber rounds with avocado mousse and baby BLT sandwiches.

This year we are seeing an increase in the Spring bookings of First Communion Lunches. Typically in private homes anywhere from 20 to 60 people and we have some great menus for them as well! What a busy month!! Just now getting back on track with our posts.

This past weekend had us catering "BACK STAGE WITH ADAM" at a rock n roll inspired Bar Mitzvah at the Addison Conference Center. Rockin' decor by Themes To Go and the awesomeness that is Lori Gerard. We were also catering bar service at NTX for an Iranian New Year's concert.

Coming up this week - Kaplan College Arlington Grand Opening, Chicago Title, Old American Mutual, Saks 5th Avenue and a fabulous event at Swarovski Northpark tomorrow with the editor of Harper's Bazaar, Avril Graham.

Passover begins next week - so breakout the matzoh !!! More details on our Passover feasts coming in the next couple of days! Until then.......make it a DELICIOUS DAY!!!

Thanks to everyone who helped fill the Little Red Socks for Bryan's House last month. With your help we delivered over 50 of them filled with change and bills that will be used to give care to children with HIV. CaterKing kicked in another $100 for this amazing organization. The charity for Feburary is the American Red Cross Haitian Relief Fund.
